Filling (~40 small pies)

  • 3 tbsp olive oil
  • 1 medium onion
  • 2 fresh fine onions
  • 200g (7.1oz) fresh, tender spinach
  • salt & pepper
  • 100g (3.5oz) grated cheese
  • 100g (3.5oz) cream cheese
  • 1 egg + 1 for spraying at the end
  • roasted sesame seeds


  • 500g (1.1 lbs) self raising flour
  • 100g (3.5oz) olive oil or corn oil
  • 150g (5.3oz) drained yogurt
  • 1 egg, whipped slightly
  • 1 small orange, juice and zest
In mid-sized bowl, pour the flour, open a small laquer and add the dough ingredients, keeping the juice of the orange juice gradually added. If the dough needs it, add still a little flour.
Knead a soft, velvety dough that will not stick to the hands. Cover it with a transparent membrane and leave it aside until we prepare the filling.
In a pan, pour the oil and the chopped onion. We turn it sometimes until it becomes transparent. Add the fresh onions. Mix.
Finally, add the spinach and sliced pepper. Let it wither to be sautéed and cooked. Remove the pan from the fire and let the spinach cool down.
On the worktop, pour a little flour, get about half the dough and open a 2-3 mm (0.08-0.12 in) thick flat sheet. Cut with rounded dough with Ø10-12cm (Ø3.9-4.7 in) round dough trays. Place them aside on a floured surface ready to be filled. Repeat the same until the dough ends.
Σε μπωλ ρίχνουμε τα τυριά κι ένα αυγό χτυπημένο. Ανακατεύουμε καλά και προσθέτουμε το σωταρισμένο σπανάκι, ώστε να γίνει ένα μείγμα που θα είναι η γέμιση των πιτακίων.
Take a dough sheet put in the center some filling, with the tip of our finger smear a little water around the disc and close the dough above the filling in triangles, square sachets or small old lamps. Press lightly to close.
Place them on a large baking sheet on non-stick paper and at a distance. Pick the egg and sprinkle with roasted sesame seeds. Bake in a preheated oven with air at 180℃ (356℉, Gas Makr:4.2) for 40'-45' or until golden.
