Yogurt Biscuits are delicious little butterless sweets, with vanilla pudding mix & of course Greek yogurt. They are easy to make and you can enjoy them for breakfast or as a snack. They are ideal for milk, coffee or a cup of good aromatic tea because they are soft, tender, velvety - almost infantile - and very tasty, with a seductive vanilla & lemon aroma.
Their preparation is very simple: we only need a bowl and a spoon and in a few minutes the dough will be ready to be cooked and baked… another reason to prepare it right away! Ingredients (~15 Cookies)

  • 200g self-rising flour
  • 1 κ.γ. baking powder
  • a pinch of salt
  • 43g/1 folder vanilla pudding mix
  • 120g sugar
  • 1 egg
  • 100g Greek strained yogurt
  • 1 lemon, the zest
  • 40g vegetable oil
  • some brown sugar to sprinkle
In a medium bowl, sift the flour.
In the bowl add vanilla pudding mix and baking powder. Pour a pinch of salt and light oil.
Mix ingredients with a spoon. Add the yogurt and whipped egg.
Mix the ingredients with a spoon and sprinkle with lemon zest. If the dough is sticky add a tablespoon of flour.
Take spoonfuls of mixture and push dough onto non-stick surface into large ovenproof pan and spacing.
Sprinkle the surface with brown sugar.
Bake in preheated oven at 160℃ (320℉, Gas Mark:2.8) for 20'.
Once they are roasted from the top and browned from the bottom, remove the pan from the oven and allow them to cool for 10 minutes.
