And for you students, I have prepared this cake for you, so you can make it at the beginning of the week and have a little slice every day -if you are in the mood- without feeling guilty, along with your morning coffee. I promise you, you'll go out on your way to school with the most happy and satisfied smile on your lips.
This recipe is a small recipe for almost a lot. For single or small families.
What I love about this cake, besides being extremely fast to prepare, is that it's a clever idea of what a wonderful cake/snack means, exactly! Fairly rich, with crumbly crumbs, soft, fluffy and soft in texture. I could eat this cake for breakfast, lunch and dinner…

streusel/Crumb Topping

  • 35g all-purpose flour
  • 50g light brown sugar
  • ¼ tsp cinnamon
  • 30g cold butter
  • pinch of salt
First we make the grating mixture to get it ready for when we need it.
In a small bowl mix the flour, brown sugar, cinnamon, cold butter and salt to prepare the sifting mixture. Stir by hand or with a fork until thick bristles. Leave the bowl aside for later.

Cake (~8 slices)

  • 60g vegetable oil
  • 50g light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 60g fresh milk
  • 100g all-purpose flour
  • 1 tsp baking powder
  • pinch of salt
  • 1 tsp light brown sugar
Before we start making the cake, cover with a non-stick paper with a 20×10×8cm (7.9×3.9×3.1 in) shape.
In a medium sized bowl place the egg broken, the sugar, the vanilla extract, the oil, the salt and the milk. Beat them briefly with a wire to unite.
Add the flour - into which we have poured the baking powder - in two portions.
Do not exaggerate in the batter to mix the flour with the other ingredients.
In the prepared form we pour half a slice of cake and over half the mixture we have left aside.
Add the remaining porridge over the grating mixture and above the remaining grate mixture.
Bake in a preheated oven at 175℃ (347℉, Gas Mark:3.9) on the penultimate grill for 40΄-45΄. When cooked, remove it from the oven and place it on a grill. While hot, sprinkle with a little brown sugar. After it cools down we unload.
