A delicious dessert like this, made by all moms, with cookies of different flavors, rusks, savoiardi-biscuits or any kind of seasonal fruit or jams . Here with crunchy stuffed cookies at the base and crumbled on top and a nice velvety cream with lemon zest & yogurt jelly.

Ingredients (8 servings)

  • 200g (7.1oz) (2 envelopes ×100g) lemon jello
  • 500g (1lbs 1.6oz) boiling water
  • 200g (7.1oz) Greek yogurt
  • 200g (7.1oz) gold water
  • 3 tbsp powdered sugar (optional)
  • 200g (7.1oz) stuffed cookies, lemon flavor
  • 1 lemon, juice and zest
In a large bowl, dissolve the 2 sachets of jelly powder in hot water. Stir with a whisk to dissolve the jelly well.
Set aside to cool the mixture. Gradually add the cold water, icing sugar…
… and finally yogurt. Mix well so that it is fully incorporated.
We pass it through a strainer with a fine sieve to keep those yoghurt balls that did not dissolve. We throw it in a metal rectangular form with dimensions 12×22×6 cm (4.7×8.7×2.4 in). Add the lemon zest & juice. Stir gently & put it in the fridge.
In half an hour, when it has started to coagulate, add a few cookies to the surface of the yogurt jelly. Leave it in the fridge for 5 hours to thicken well. Turn over - after immersing the form in lukewarm water for a few seconds - on a plate and sprinkle with chopped biscuit.
