Apple Pie Ricotta Cheese

Apple pie, a little different than usual, because its main ingredient is cheese. A delicious, healthy and low fat cheese, ricotta cheese.
The sweet and highly aromatic flavor of apples, combined with raisins, is in harmony with the slightly salty and "buttery" texture of the cheese.
An uncovered apple pie, which is relatively quick to make, easy, and with ingredients that are almost always in our kitchen. Feel free to combine these flavors. The result will be a hearty dessert that will surely reward you.

Ingredients (6 servings)

  • 1 sheet puff pastry
  • 120 gr/ 3 oz sugar
  • 120 gr/ 3 oz butter
  • 3 eggs
  • 400 gr/ 14 oz ricotta cheese
  • 3 apples
  • 120 gr/ 3 oz raisins
  • 1 shot brandy
  • 1 tsp cinnamon
  • 1 tbsp corn flour
  • 3 tbsp fine semolina
  • zest of one lemon
  • a pan 25cm×30cm/ 10"×12"
  • one sheet of greaseproof paper
Soak the raisins for 5 minutes in lukewarm water, drain and sprinkle with brandy to soak well. Leave them aside until we need them.
Add the sugar and the soft butter in a bowl.
Separate the egg whites from the yolks, one by one carefully.
Beat the egg whites into meringue.
Start beating the butter and the sugar until they turn white.
Add the cheese as we continue to beat…
…the cinnamon, semolina, lemon zest and cornflour. Finally add the egg yolks.
With a spoon, mix the raisins with the brandy.
Add the meringue lifting and stirring the mixture from the bottom up and round until mixing.
We let the mix briefly to wait. Peel and cut apples into small pieces. Spread in the baking pan with greaseproof paper and place the sheet puff pastry on top. We must lift the side to contain the cheese mixture. Pour the beaten mixture into the pan.
On top, place the pieces of apple, scattered across the surface of the pan.
Sprinkle a little sugar and cinnamon. Cut everything overflowing from the paper and pastry. Put it on the bottom rack of the oven at 180°C/ 350°F/ Gas mark 4, for one hour. If browned early, cover with a foil.
In the hour, we check if a blade comes out clean. Let the apple pie on a rack to cool.
