Spinach Cheese Walnuts Swirls

Fluffy and delicious pastry rolls, stuffed with spinach, spicy cheese and walnuts. Easy snacks made with pure ingredients of our choice, eaten by hand, at work or school to make sure that our children eat a healthy, energizing and delicious delicacy.
You can use them for a light dinner, served with a green salad and a glass of chilled white wine.
They are suitable for buffets, for travel and anywhere you need something practical for a snack.

Ingredients (24 pieces)

  • 2 sheets puff pastry
  • 1 egg
  • 300gr/ 10 oz fresh spinach
  • 10-12 walnuts (kernels cut with a knife)
  • 100 gr/ 4 oz grated Parmesan
  • 100 gr/ 4 oz gruyère cheese grated coarse
  • 1 green onion (the leaves)
Peel, wash and put spinach in 1 cup boiling water for 2'-3'. Strain in a colander and press with a fork to drain well. Leave aside to cool.
On a baking sheet, lightly floured, roll out the thawed puff pastry sheet with a rolling pin until it is level.
Beat the egg with two tablespoons of milk and brush the sheet of puff pastry.
Finely chop the green leaves of the onion and mix with grated cheese.
Sprinkle the cheese mixture over the surface of the puff pastry.
Do the same with chopped nuts…
…and finish spreading across the surface, above everything, the drained spinach.
Grab the edge of the leaf and begin to wrap, rolling gently, and leaving the union side down.
With a sharp knife cut into pieces about 2 cm/ 1" thick.
Spread baking paper on a large baking pan, place the cut rolls with a cut surface facing down and brush with egg all around and the top side.
Bake in a preheated oven at 180°C/350°F/Gas mark 4 for 20-25 until they rise, get a golden colour and cook through.
After the heavy festive Easter dinner, a light snack is what we need to detoxify from the meat-eating, many of use probably overdid.
