Calzone

Calzone is a wrapped snack with crunchy crust and its place of origin is Italy.
Made with similar ingredients as the pizza, in a folded pastry sheet in a a crescent shape, before putting it in the oven.
The typical Calzone is stuffed with tomato and mozzarella. It may also include any of the ingredients we put in a pizza!
Medium-sized calzone-snacks are sold on the streets, in Italy, by street vendors because they are easy to eat standing up.
The dough, I think, is very easy to make in the kitchen even for a novice!

Dough (2 calzone-4 servings)

  • 300 gr/ 2.5 cups flour
  • 2,5 tsp dry yeast
  • 1 cup warm water
  • ½ shot of olive oil
  • pinch of salt
  • some black sesame seeds, optional
Dissolve the yeast in some lukewarm water.
In a large bowl sift the flour, add salt, oil, the dissolved yeast and carefully and gradually the warm water. Knead until you have a dough soft and supple.
Divide the dough into two balls and cover with a towel.
Keep it warm to rise while preparing the ingredients for the filling.

Filling

  • 330 gr/ 1 can mushrooms, sliced ​
  • 4 tbsp olive oil
  • 2 small ripe tomatoes, cut into cubes
  • 1 red pepper, cut into squares
  • 250 gr/ 9 oz ham squares
  • 500 gr/18 oz cheeses (like cheese, gouda, edam) grated
Rinse the mushrooms and place in a strainer. Drain well.
Add the mushrooms with the olive oil in a skillet and sauté lightly.
Add the peppers and finally the chopped tomatoes.
Let them sauté well, until all juices evaporate and the stuffing gets completely dry.
In another bowl mix the chopped ham with grated cheese.
Take the ball of dough and roll it in a round, not too thin, sheet on a lightly floured surface.
There is no need for any special technique for the sheet, just keep it relatively small.
Fold the sheet to find the middle of it.
The filling will be placed in one half of the sheet.
Spread half the dose of the filling on the bottom half of the sheet. Put on top half the dose of the cheese mixture across the surface.
Cover the filling with the second half of the sheet.
Wet the bottom side lightly with a little water and press with a fork for the two sides to stick together.
Repeat the same with the second half of the dough.
Spread a little oil and sprinkle with black sesame. We make small cuts, place on a baking pan with parchment paper and bake in preheated oven at 190°C/ 370°F/ Gas Mark 5 for about 30'.
If you prefer you can substitute the olive oil in the end with diluted egg yolk in some milk.
