Leeks and Rice

A delicious dish with the sweetness of leeks, balancing perfectly with the accompanying chewy rice. Smooth and pleasant to a sensitive (and/or) hungry stomach and most importantly, very fast to make for those who do not want to spend much time in the kitchen or are always busy…
Enjoy it with piquant olives and maybe with a little feta cheese.

Ingredients (4 servings)

  • 1 kg/ 2.2 lbs leeks
  • 50 ml/ 1.5 fl oz
  • 1 large onion, chopped
  • 1 diced tomato
  • 50 ml/ 1.5 fl oz olive oil
  • 1 small glass wine
  • 500 ml/17 fl oz water
  • 200 gr/ 7 oz arborio rice
  • 1 tsp Turmeric
  • salt & pepper


Clean and wash the leeks.
Put the olive oil in a saucepan and sauté the onion for a few minutes.
We keep adding the leeks, cut in small slices, wait for a while to sauté and add the wine.
Add the diced tomatoes. Let the sauce cook for 5-10 minutes.
Add the water and when it boils add the rice, well washed and drained, the turmeric, the salt and the pepper, according to our taste.
Boil until the juices are absorbed and the rice to be ready for about 15 minutes. Leave it with some juice because the rice will absorb some more and we do not want it to get dry.
