Spicy Raisin Cake - Fanouropita

Spicy Raisin Cake with simple lenten ingredients.
The flour, olive oil, orange juice, along with the spices, tied in a highly aromatic combination.
A low budget cake, but very tasty and healthy.

Spicy Raisin Cake - Fanouropita

Ingredients (40 pieces)

  • 150 ml/ 5 fl oz olive oil
  • 150 gr/ 5.5 oz sugar
  • 650 ml/ 22 fl oz fresh orange juice
  • zest of 2 oranges
  • 800 gr/ 28 oz wholemeal flour, sifted
  • 200 gr/ 7 oz raisins, soaked
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1 tsp cloves
  • 1 tsp nutmeg
  • sesame or powdered sugar for sprinkling
In a large bowl, add the olive oil and the sugar.
Remove the zest from 2 oranges and squeeze.
Add the juice into the pan with oil and sugar.
Stir.
Put in the spices and baking powder.
Put in the orange zest.
Stir.
Continue adding the flour.
Stir well until we have a uniform mixture.
Finally, add the soaked and drained raisins.
Stir gently with circular motions.
This mixture will look like a thick batter.
Grease and flour a baking pan.
Pour in the mixture of the cake and put in oven at 180°C/ 350°F/ Gas Mark 4 for 45′.
Test with a blade knife that comes out clean, without traces of dough.
Remove the pan from the oven, let cool thoroughly on a rack and cut the cake into large squares.
Sprinkle with powdered sugar.
Spicy Raisin Cake - Fanouropita Apart from the Orthodox tradition, which accompanies the Fanouropita, essentially it remains a very tasty, hearty and healthy pie, without much fat, eggs or milk.
In this cake I used wholemeal self raising flour, rich in fiber and with a strong taste of cereal.
The cake is relatively unsweetened, you can put some more sugar if you prefer it sweeter. Of course the icing on top, adds to the sweetness.
