Green Beans Salad

Fresh, green beans, thin french green beans for a simple, delicious and healthy salad.
On hot summer days, they gives us the opportunity to have a refreshing light and tasty dish.
Green bean salad is as delicious as green bean stew with the advantage of shorter preparation time and fewer calories.

Green Beans Salad

Ingredients (4 servings)

  • ½ kgr/ ¼ lb fresh green beans
  • 3-4 small potatoes
  • 1 ripe tomato
  • ½ tsp baking soda
  • olive oil, vinegar, salt, lemon
  • 2 tbsp grated walnuts, optional
Wash and clean the side fibers and the top/bottom of the beans.
Peel potatoes and cut into thick slices.
Wash the tomato.
Boil the water and add the soda.
Add the vegetables and cover the pot with its lid.
The potatoes and tomatoes will get quickly cooked, so remove them and put them in a bowl.
Do the same with beans when ready.
Drizzle with lemon and a little vinegar. Stir and serve. In each dish add some chopped walnuts on top (optional).
