Oven Pancake with Raspberries

Baked pancake with raspberries and icing sugar.
The sour taste, aroma and color of blackberries make this simple pancake a nice dessert for a delicious Sunday breakfast along with coffee.

Ingredients (4 servings)

  • 4 tbsp self raising flour, sifted
  • 60 ml/ 2 floz milk
  • 2 tbsp sugar
  • a pinch of salt
  • 3 eggs
  • 2 tbsp butter, melted
  • ½ lemon, zest
  • 250 gr/ 8.8 oz raspberries, fresh
  • 1 tbsp icing sugar, for dusting
Put the flour, milk, sugar, salt, eggs, butter, and lemon zest in a bowl and whisk to mix.
Butter and sprinkle with a little sugar a non stick pan with base Ø18cm/ Ø7.1".
Pour the batter mixture in the pan.
Wrap the handle of the pan with aluminum foil. Bake in preheated oven at 190°C/ 374°F/ Gas 5 for 20' until golden and risen.
Remove the pan from the oven, leave it on a rack to cool slightly and stabilize the shape of Pancakes in the pan.
Spread the raspberries on the surface of the pancake and sprinkle with icing sugar.
