Ingredients (~10 servings)

  • 500g minced meat
  • 100g rice rinsed
  • 1 China cabbage, large
  • ½ bunch of parsley, finely chopped
  • ½ bunch of dill, finely chopped
  • 2 dried onions, crushed
  • 2 fresh onions, finely chopped
  • 2 carrots grated
  • 2 lemons
  • 2 tsp tomatoes paste
  • 80g olive oil
  • salt & pepper
Separate the leaves of cabbage from the stalk with a knife, wash them carefully and put them a little in a saucepan with boiling water to boil. Remove the spoon and let it cool down. The water we boiled in does not throw it away. Prepare the vegetables and the aromatic herbs of the filling.

… rice, parsley, dill, onions, tomatoes paste and carrots. Add the juice and zest of one lemon, half olive oil and salty pepper. Pour a cup of water in which that boiled the cabbage. Knead until homogenized. If necessary, we add more water to be the filling of the watery.
Bake a deep oven pan, measuring 20cm×30cm (7.9in×11.8in), wrap it with the leaves one at the base and the sides protrude. Rub with a little olive oil.
Empty the ⅓ of the filling and lay it using the back of a spoon.
From the top, spread a few leaves to cover the filling and sprinkle with a little olive oil. This is repeated two more times.
Finally, turn up the leaves, that are protruding, to cover the filling very well.
Cover completely with extra leaves and sprinkle some olive oil and the second lemon juice. Pour 2 cups of water than boiling cabbage, cover with lid or foil and bake in the bottom grill of the oven at 190 ℃ (173℉, Gas Mark:5) with air for 1 hour and 15 or as long as necessary to cook the filling and rice in the inside of the leaves

Yogurt Sauce

  • 300g Greek strained yogurt
  • 2 tbsp dill
  • 2 tbsp olive oil
  • 3 tbsp white vinegar
Mix the materials well. Spread the sauce on the pie after the temperature has fallen or put it on the pie on the serving dish.
★ If we do not find Chinese cabbage, we can use our well-known common cabbage.
