Ingredients (8 servings)

  • 50g cake flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • 3 eggs
  • 10g sugar+20g sugar for the meringue
  • 15g corn oil
  • 50g yogurt
  • 1 apple
  • icing sugar for sprinkling
Separate the yolks from the whites very carefully. Put the yolks in a small bowl and the egg whites in a larger one.
Add 10 grams of sugar to the yolks and stir with the whisk for a while. Add the oil.
Add the yogurt, stirring gently to make a uniform mixture. Sift the flour together with the baking powder & salt over the yolk mixture. Combine in a single mixture. Set it aside until the meringue is ready.
Using a hand mixer, beat the egg whites together with the 20 grams of sugar until they become a tight meringue.
With the spatula, take 2 tablespoons of meringue and incorporate them into the yolk mixture, stirring gently from bottom to top.
Pour the yolk mixture into the bowl with the rest of the meringue and combine them into a single mixture, stirring very gently so that the meringue does not lose its air. Pour the cake mixture into a lined baking tray with Ø18 cm.
Wash, wipe, clean the apple and cut it into thin slices.
Place the apple slices radially on the surface of the cake.
Bake in preheated oven at 160℃ (320℉ Gas mark 2,8 ~3) for 35'-40' until the surface swells up well and turns brown.
