Sweet Potato Oven Fries with Avocado Dip
The sweet potato is one of the most nutritious foods on the planet, full of nutrients, including vitamin C, antioxidants, vitamin A, beta-carotene, and many others. They are also low in fat and has anti-inflammatory properties.
Sweet potatoes are not a common taste in our table, but it is delicious and cooked in various ways. Baked in the oven, sprinkled with herbs and spices, served with a spicy avocado dip are irresistible and sold out.

Sweet Potato Oven Fries with Avocado Dip

Ingredients (2 servings)

  • 550-600 g (1.2-1.3 lbs) sweet potato
  • 4 tbsp olive oil
  • 1 tsp sweet paprika
  • ½ tsp paprika chili
  • ½ tsp coriander powder
  • ½ tsp turmeric
  • ½ tsp ginger
  • ½ tsp pepper
  • coarse salt
Wash, wipe and remove with a peeler, the peel from the sweet potato.
Remove any black speckle there are.
With a sharp knife cut into thick slices and then into sticks.
Gather them at the center of a baking pan, lined with greaseproof paper. Sprinkle with olive oil and with the spices except the coarse salt that will add after baking.
Spread the sweet potato sticks cut across the surface of the pan.
Bake in preheated oven at 200°C (392°F, Gas 5.7) for ~20'.

Avocado Dip

  • 1 ripe avocado
  • 100 g mayonnaise
  • 100 g cream cheese
  • 1 red, hot chilli
  • ½ lemon juice & zest
  • pepper & coarse salt
Cut the avocado in two, remove and mash the flesh into a bowl. Add the mayonnaise, cream cheese, lemon juice, pepper, salt and chopped chilli. Mix. On top sprinkle the zest.
