Mini Cheese Pies

Fluffy, mini pies with dough made with virgin olive oil, that gives them a great flavor without an oily taste, if it is of very good quality.
The combination of different cheeses and spearmint gives a balanced and aromatic taste.
A delicious snack for all times and seasons. I assure you, they are very pleasantly eaten!

Ingredients Dough (40-45 pies)

  • 250 ml/ 8.5 fl oz milk
  • 250 ml/ 8.5 fl oz olive oil
  • 1 cube of fresh yeast, 42gr/ 1.5 oz
  • 1 kilogram/ 2.2 lbs flour

Filling

  • 250 gr/ 9 oz feta cheese
  • 150 gr/ 5.5 oz ricotta cheese
  • 100 gr/ 3.5 oz parmezan cheese
  • 2 tbsp dried spearmint, optional
  • 3 eggs
  • 2 egg whites
  • 2 egg yolks to spread
Place the saucepan on the fire, low temperature and add the oil and milk to warm slightly. Should be 30°C, so that it feels warm to our little finger. No more than 30°C because the yeast will not rise the dough.
Remove from the heat and dissolve the cube of yeast in your hand.
Add slowly the flour.
Knead until you have a soft and pliable dough.
You may not need to use all the flour.
We gather the dough into a ball, cover the pan and set aside for 1 hour until the dough doubles in volume.
In the meantime we are preparing the filling:
With a fork dissolve the cheese.
In a separate bowl, beat the 3 eggs and the 2 egg whites and add to the cheese mixture. Add the spearmint and stir well.
After 1 hour check that the dough has risen well.
Spread baking sheets on two large shallow baking pans. Cut small pieces of the dough to make small balls the size of a walnut.
Place the balls onto the baking sheet keeping some distance between them because they will risen again.
Take the first ball, and spread a small round dough sheet in our hand.
The dough is soft and easily molded.
Fill each pie with a teaspoon of filling mixture and turn to cover up with the rest of the dough.
We press the edges to stick around well.
Place the pies on the baking sheet well spaced.
Dissolve the two egg with 2-3 tablespoons of milk and brush the pies.
Put in preheated oven at 180°C/ 350°F/ Gas Mark 4 for 20 minutes or until cooked through and get a golden brown color.
Repeat with the second baking sheet o until you run out of ingredients.
These pies are tasty with a very easy and soft dough. Try them!
You can choose to make a smaller amount, for a buffet or table.
Eaten pleasantly lukewarm or cold.
