Potato Pancakes

Potato pancakes sprinkled with paprika.
Simple, tasty, crisp and funny. Make them for your children, and the grown-ups, and "decorate" them with whatever you like. From the most classic: fried eggs, to the most sophisticated: smoked salmon, cream cheese or salmon caviar!

Potato Pancakes

Ingredients (2 servings)

  • 2 medium potatoes
  • 20 gr/ 0.7 oz butter
  • paprika & salt
Peel, wash and wipe the potatoes.
Grate on the coarse side of the grater.
Heat half the butter in a pan with Ø18 cm/ Ø7.1", over medium heat.
Put the grated potato, stir a little, for the butter to go everywhere, and press firmly with a spatula to combine the crumbs.
When it is cooked and golden on bottom, cover the pan with a dish that fits tightly…
…and overturn.
Put the pancake back in the pan and cook the other side.
With the same procedure prepare the second pancake.
Potato Pancakes You can use a larger diameter pan and make a big pancake, which should not exceed one cm/½". You can also make them much smaller.
Serve on a plate and sprinkle with salt and paprika or put onto the pancake what you prefer, like cheese, chopped ham, crisp bacon or fried eggs.
