Watermelon Rind Pickles
Peel sweet watermelon in spicy pickle!
It's very simple to do, using the peel of watermelon, which we throw.
Is very special sweet and spicy at the same time because of the spices with a little bite of chili pepper in the aftertaste.

Watermelon Rind Pickles

The sweet flavors of this spicy pickle balance well as pickled remains both mature and combine the spices. The proportions of sugar and vinegar gives a distinctive touch to pickle.
Accompaniment green light salads, grilled meats, such as hamburgers, or grilled steak and cheeses fresh or matured. Feta cheese, but also the softer yellow accompany perfectly.

Ingredients (∼1 vase750 ml/ 1.57Pt)

  • 1kg (2.2lbs) watermelon peels
  • 1lt (2.11Pints) water
  • 1 tbsp coarse salt
  • 220g (7.8oz) sugar
  • 1 tbsp salt
  • 130ml (4.4floz) white vinegar
  • 2 cloves garlic
  • 5 seeds pepper
  • 5 grains allspice
  • 5 cloves, nails
  • 1 cinnamon stick, broken in two
  • 1 tbsp ginger powder
  • 1 small hot pepper
Cut the red watermelon flesh, leaving a thin pink layer onto the skin.
Put the red flesh of watermelon in a bowl, which covers, and place it in the refrigerator.
Cut the green outer skin and discard.
Cut the cleaned skin into triangular pieces width 2.5cm-3cm (1"), not less.
Weigh the cleaned watermelon rind to be 1kg (2.2lbs).
In a large pot, add the water to the boil, just as it boils, add the pieces of peel and salt.
Boil for 5 min not more, to soften slightly and strain into a metal bowl.
In another smaller pot, add the teaspoon of salt, sugar and add the remaining ingredients.
Bring to boil, stirring constantly until sugar dissolves.
Pour the contents of the pot in the metal bowl with the skins of watermelon.
Place a plate to keep the peel in the syrup.
Once cooled cover the bowl with cling film and refrigerate.
Repeat the boiling syrup for 1′-2′, for additional 2 times, for 2 days. Draining from the skins before cooking.
The last cooking stuff carefully sterile jars with pieces of watermelon…
… and add the syrup to fill a 750ml jar or 2 smaller. The fluid level is just below the rim of the jar.
Seal with a lid.
