Loaf Cake is delicious, festive, and crunchy with poppy seeds and many dried fruits, soaked with the juice and zest of fresh orange. The oil gives a special texture, moisture and flavor and its unique taste and sweetness of dried fruit make it irresistible.
Certainly is one of the cakes that we make again and again.

Poppy Seed Fruit Cake

Ingredients (~6 servings)

  • 170g (6 oz) flour + 1 tbsp for powdering
  • 30g (1.1 oz) semolina, thick
  • 2 tsp baking powder
  • 1 tsp soda
  • 200g (7.1 oz) dried fruit
  • 1 orange, juice & zest
  • 200g (7.1 oz) sugar
  • 3 eggs
  • 200g (7.1 oz) vegetable oil
  • 1 tbsp poppy seeds
  • 1 tsp icing sugar for powdering
  • some fruits for decoration
Wash, wipe off the orange and remove the zest. Squeeze it take the juice. Assemble them in a bowl and cut in small pieces the dried fruit. Leave the raisins whole. Mix well and leave them to absorb the juice of an orange.
In a large mixing bowl, add the oil, sugar and eggs. Beat with an electric hand mixer, thoroughly to make a frothy mixture and viscous.
Drain the dried fruit by passing them through a colander and sprinkle with a tablespoon of flour. Pour the orange juice to the egg mixture.
Sift the flour with the baking powder and baking soda. Add the mixture of flour and semolina in the bowl. Mix gently and very little just to unite the ingredients.
Add the poppy seeds. Mix.
Finally pour in the mixture of the bowl dried and floured fruits.
Invest an oblong cake form with greaseproof paper, wet. Squeeze with your hand to drain well, stretch and lay.
Inside the form pour the beaten mixture of cake.
Bake in preheated oven at 180°C (356°F, Gas 4.2) for 40'-45' or until cooked. Test with a knife blade that comes out clean.
