Greek Yoghurt Soufflé
Delicious, soft, inflatable and small sweet yoghurt soufflé, with a strong taste of orange thanks to its zest filled with essential oils.
Eaten very pleasantly accompanied with chocolate sauce, fruit syrup or a simple sugar. With anything accompanied it remains delicious and irresistible.

Ingredients (6 servings)

  • 200g (7.1oz) yogurt
  • 4 eggs
  • ½ tsp cream of tartar
  • 30g (1.1oz) flour
  • 1 tsp baking powder
  • 1g (0.035oz) salt
  • 1 tsp vanilla extract
  • 1 orange, zest
  • 50g (1.8oz) sugar
  • butter & sugar for ramekins
Melt the butter and with a brush grease well the 6 ramekins. Sprinkle with some sugar, place onto an oven grill and set aside to wait.
We separate the yolks from the whites and in mixer bowl beat the egg yolks with yogurt until they rise.
To the mixture, add the flour, the baking powder and salt. Whisk them briefly to homogenize.
Add the orange zest, vanilla and stir with a silicone spatula.
In another bowl, beat the egg whites with cream of tartar and sugar into meringue.
Continue beating until the meringue polishes, tighten and stand.
Finally add in three additions to the yolk mixture, mixing gently from bottom to top until the ingredients are incorporated.
Fill the ramekins with the beaten mixture.
Bake in preheated oven at 180°C (356°F, Gas 4.2) for 15'-20' until they rise and browned.
Consume immediately, sprinkled with a little powdered sugar or jam diluted, or melted chocolate.
