Feta and Sundried Tomato Loaf
Cake with sundried tomatoes, feta cheese and olives. Delicious, easy, spicy and fluffy to beg to be savored. Corn flour gives it color and flavor bread.
A delicious snack for all times. Accompany it with a light green salad and a cold beer and enjoy it as a meal.

Feta and Sundried Tomato Loaf

Ingredients (6 servings)

  • 150 gr (5.3 oz) flour
  • 30 gr (1.1 oz) corn flour
  • 7 gr (0.25 oz) dry yeast
  • 180 gr (6.3 oz) fresh milk
  • 4 eggs
  • 1 jar (250 gr - 8.8 oz) sun dried tomatoes and their oil
  • 100 gr (3.5 oz) feta cheese
  • 80 gr (2.8 oz) gruyère cheese
  • 8-10 olives
  • 2 tbsp fresh mint (peppermint) or basil
  • freshly ground pepper
In lukewarm milk add the yeast and stir vigorously to dissolve.
At the same time grate the gruyère on coarse grater, chop tomatoes into smaller pieces and chop the feta into bite-sized cubes.
Remove the pits from the olives and with a pair of scissors cut the mint leaves.
In medium size bowl, sift the flours and pour in the eggs and the milk mixture with the yeast. Add the oil from the jar of sun-dried tomatoes.
Mix gently and very little to slightly homogenize the ingredients.
Inside the mixing bowl add the chopped ingredients and freshly ground pepper.
With a plastic spatula bring two rides to get covered with the batter.
Do not stir.
Cover an oblong form, with greaseproof paper, protruding 2-3 cm (1") from the two long sides of the form and pour in the mixture of the cake.
Place the form in the penultimate rack of oven and bake the cake in a preheated oven, with air at 190°C (374°F, Gas 5) for ~35'-40'.
At the end of time, test, if it is cooked, piercing the center of with a wooden skewer to come out clean.
Remove the form from the oven and place onto a rack. Let it cool for 10'.
Take the cake out of the form by lifting it from both sides of the paper and let it cool completely onto the rack.
Cut into slices and the first piece rightfully belongs to the photographer of this cake for his contribution and patience…

  1. Ζαμπία, φαίνεται εξαιρετικό. Φτιάχνω κάτι αντίστοιχο αλλά δεν έχει τόσο περιποιημένη εμφάνιση. Είναι κάπως πιο τσαπατσούλικο :-)
    Θα του πάνε πολύ και τα τηγανιτά αυγά.

      Συνδύασέ το όπως θεωρείς καλύτερο και για τα σούπερ Πρωϊνά σας μια χαρά θα είναι με τα τηγανιτά αυγά!
