I love Chinese Cuisine, the way we enjoy it the western restaurants, but also that Chinese Cuisine, we find in the place that created it! This classic dish of fried rice with shrimp is a quick and easy recipe in restaurant style.
Shrimp, rice, eggs, green onions and bean sprouts in a jar, because in Greece is not always possible to find fresh bean sprouts.
We use steamed or boiled rice, ideally from the previous day, that is dry enough. So it will be less sensitive to mixing and will become even better at least in terms of aesthetics…
Cook over high heat for a short time and with quick movements. So we need to have everything you need ready, cleaned and cut to the corner, the workbench.

Shrimp Fried Rice Chinese Shrimp Fried Rice

Ingredients (4 servings)

  • 250 g (8.8 oz) uncooked rice
  • 500 g (1.1 lbs) water
  • 4 tbsp corn oil (vegetable oil)
  • 100 g (3.5 oz) bean sprouts fresh or canned, drained
  • 1 onion, grated
  • 500 g (1.1 lbs) shrimp, peeled
  • 1 fresh onion
  • 2 eggs
  • 1 tsp salt & ½ tsp pepper
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
In a saucepan, add the water and let it boil. Add the rice and stir. Lower heat, cover and simmer for 15′-20′.
Remove it from heat, pour the rice in a wide dish and leave it there to cool and dry.
In a bowl collect the eggs, chopped green onion, salt, pepper, soy sauce and a spoonful of sesame oil. Beat well and let them stand for a while.
Heat a large frying pan or wok for 2'. When the pan or wok is hot, add corn and grated onion. Cook briefly and add the bean sprouts. Mix well and cook for very little.
First add the shrimp and cook for another 3' and immediately after the cold rice, constantly stir. With a wooden spoon. Move rice/ shrimp to the sides of the wok, making a large hole in the center of the ingredients. There pour the beaten egg mixture. Cook for another 4' until the eggs begin to coagulate. Stir to mix the ingredients together uniformly.
