Ingredients (8 servings)

  • 3 eggs
  • 110 gr (3.9 oz) olive oil
  • 250 gr (8.8 oz) yogurt
  • 150 gr (5.3 oz) sugar
  • 270 gr (9.5 oz) flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 200 gr (7.1 oz) blueberries (fresh or frozen)
In a small bowl mix the flour, baking powder and baking soda. Leave aside for later.
In another medium size bowl, break the eggs. Beat with whisk.
Add the oil and yogurt. Continue to beat until combine.

Pour the mixture into the prepared cake.

Bake in preheated oven at 180°C (356°F, Gas 4) for 35-40 mins. Test with a toothpick that comes out clean.

Remove from the oven and let it cool on a rack.
