Baked Sea Bream with Almonds

Sea Bream fish with tasty, pure white flesh, flavored with a buttery sauce made with almond flakes, white wine and fresh cilantro.

Ingredients (2 servings)

  • 2 bream fish, fresh, large, gutted and rinsed
  • 80g (2.8 oz) butter
  • 2 lemons
  • salt, coarse
  • pepper, freshly ground
  • 50g (1.8 oz) almond flakes
  • 80g (2.8 oz) white wine
  • 4-5 springs cilantro, fresh, finely chopped
In oven proof dish pour two tablespoons of melted butter and on it put the fish next to each other. With a sharp knife make 3 diagonal incisions, 5 mm (0.2 inches) depth, and place half, thinly sliced ​​lemon (cut into thin slices).
Sprinkle with a little butter, salt and pepper.
Place the pan uncovered in a preheated oven at 200°C (400°F/ Gas mark 6) for 20 minutes or until the fish are cooked. Do not turn.
Meanwhile, add the remaining butter in a small saucepan to get hot. Add the almond flakes to get golden.
Salt and pepper.
Add the white wine and bring to a boil for two minutes.
Finally flavor the sauce with the chopped cilantro. Keep aside half a tablespoon for garnish at the end.
Remove fish from oven and sprinkle with the sauce, coriander and a little lemon zest.
Serve and eat immediately.
