Ingredients (4 servings)

  • 4 chicken thighs, large
  • 1 carrot, cut into rings
  • 1 onion, medium
  • 1-2 spring celery
  • 1 kg (2.2 lbs) potatoes
  • 3 tbsp olive oil
  • 1 juicy lemon, juice
  • 250g (8.8 oz) chicken broth
  • 2 tbsp mustard
  • 1 tsp turmeric
  • salt, pepper, oregano, paprika
In a saucepan put the chicken thighs, cut into 2. Add water as to cover them. Boil for a while with the carrot, onion and celery, cut into small pieces.
Once the meat slightly softens take it with a slotted spoon, without vegetables -do not throw away the broth- and put them in a baking pan. The gaps between the chicken pieces are filled with potatoes, cut moderate, not too thick.
Sprinkle with lemon juice and oil. Brush them with mustard.
Make the broth, which we keep from boiling the chicken. Salt and pepper and sprinkle with oregano, turmeric and paprika.
Bake at 180℃ (356℉, Gas:4.2) fan oven and convection oven up and down, until browned potatoes and thighs are cooked thoroughly. About 1:30-2 hours. Serve on a large platter on the table.
