Spinach & Cheese Roulade

Delicious, fluffy appetizer with spinach sponge cake stuffed with soft cheese, walnuts and green onions.
Do not be surprised by the combination of materials. It is very tasty!

Ingredients for the cake (4 servings)

  • 300 gr/10 oz spinach
  • salt & pepper
  • 3 eggs
  • 80 gr/3 oz soft cheese
  • 2 tbsp butter
Wash and cut the spinach into large chunks. Boil with ½ cup of water until it is soft and absorbed all the juices.
Remove from heat, add salt, pepper and one tablespoon butter.
Leave aside to wait until it cools.
Separate yolks from the whites. Beat the whites to a meringue.
In a separate bowl beat the soft cheese and the yolks well.
Add the cooked spinach to the mix…
…and the meringue.
Stir well to mix the ingredients.
Spread a sheet of greaseproof paper in the pan size 30×23 cm/ 1'×9" approx. Butter the parchment paper with the second tablespoon of butter and sprinkle with flour.
Pour the mixture and flatten the surface. Bake in preheated oven for 15 minutes. Check that is cooked through and below.
Remove from the oven…
…and wrap it with the same baking sheet from the longer side, in a tight roll with the seam facing down.

Ingredients for the filling

  • 200 gr/7 oz soft cheese
  • 1 tbsp yogurt
  • 2 thin spring onions
  • 50 gr/2 oz chopped walnuts
  • 80 gr/3 oz grated cheese
  • ½ tsp paprika
Finely chop the spring onions and walnuts.
In a bowl mix cream cheese, yogurt, onions, nuts, grated cheese and paprika.
When the roll has cooled, open and spread the filling mix…
Wrap gently, let the seam facing down and place it in the refrigerator, covered, until serving time.
Decorate with orange slices and parsley leaves.
Serve in 2 cm/ 1" slices and decorate with an orange slice on each plate.
It may well be prepared the day before.
