Ham and Cheese Cupcakes

Ingredients (~12 cupcakes)

  • 150g/ 5.3 oz self raising flour
  • 2 tsp baking powder
  • 3 eggs
  • 130ml/ 4.4 floz milk, lukewarm
  • 50ml/ 1.7 floz vegetable oil
  • 100g/ 3.5 oz mozzarella, grated
  • 150g/ 5.3 oz ham, cut in small cubes
  • 12 slices of "la Vache qui rit" cheese
In a bowl add the flour sifted with baking powder.
Add the eggs and stir gently with a whisk or a wooden spoon.
Pour the lukewarm milk, stirring to be absorbed by the flour.
And then the vegetable oil little by little.
Finally add the chopped ham and the grated mozzarella.
In small containers put a spoonful of the mixture, a slice of "la Vache qui rit" cheese and on top, another spoonful of the mixture.
Bake in preheated oven at 180°C/ 360°F/ Gas 4 for ~25'.
